I need to make a carrott cake for my mothers birthday and I need a good receipe. Does any one have one?

Here's one that I got from my mom, it's yummy!

Carrot Cake:

heat oven to 350 F

mix:
2 cups sifted flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 1/2 teaspoons cinnamon
2 cups brown sugar

add 1 cup oil

add 4 eggs- one at a time, beating after adding each egg

add:
3 cups grated carrots
1 cup chopped walnuts

pour into a greased 9 X 13- inch baking pan
bake at 350 F for 45 minutes

Cream Cheese Frosting:

beat until fluffy:
1/4 lb softened butter
1/2 lb softened cream cheese

add:
1 teaspoon vanilla
1/4 teaspoon salt

gradually add 1 lb powdered sugar, beating until creamy

if necessary, gradually beat in 3-4 tablespoons milk to thin frosting to spreadable consistency

after frosting the cake, sprinkle with 1 cup chopped walnuts, if desired

Hmmm that's a little different than my recipe.

1) Get in car
2) Drive to Costco
3) Walk over to bakery
4) Find carrot cake
5) Stand in checkout line
6) Take it to whoever gets it

Much quicker than baking! :D

Aaron :lol: that is what my sister said :lol: But she made me one.. it was a bit lopsided but she made it.. so I should do it also.

Okay I just wrote down all the ingredients :eek: WOW!! That is alot of stuff the sad thing is I don't have any of that in the house :lol: I don't cook much. Thank you for that and I will let you know how the family likes it!

I tried the reciepe last night.. and had my kids test it :eek: It was so good!!
One little thing though! I have left over frosting :p Was I suppose to put all of it on the cake :eek: Anyways it was very good!! I recomend this to everyone who has a sweet tooth!!
