What's everyone favorite way to cook chicken on the grill? I have a problem with either over- or undercooking it.

I actually put tinfoil over the grill itself and then place the chicken on while the flames are still high. I then wait awhile for the juices from the chicken to collect around it and then I poke a hole in the tinfoil and let the juices make contact with the flames, resulting in flamed chicken! The flames should shoot up onto the tinfoils surface and set the meat on fire, thus ensuring it's cooked. I have trouble with undercooking chicken as well. Caution, sometimes those flames can shoot up high, so give yourself some distance. :)

I have to boil the chicken breast for at least 30 min or it wont get done when i grill it. I then just rub them down with sauce
John Boy and Billy Sauce works best.

I am not good at cooking on the grill. :rolleyes: Unless you like raw in the middle and burnt on the outside? :D

I have never tried cooking on a grill. I usually let my stepdad do that. He is good at grilling stuff especially chicken. My dad is good with barbeque chicken and brisket.

I didn't realize John Boy and Billy had their own BBQ sauce! And I remember those guys when they were just two red neck DJ's with a local morning show in Charlotte,NC, where I used to live! I guess they've hit the big time now!

Yea, their show is being aired around the U.S. now. My local classic rock station airs them in the mornings.

If you are using a charcoal grill, dont use too much charcoal! THat will make the outside parts cook faster than the inside, and it will be raw in the middle. Take a small amount of charcoal, arrange in a nice pyramid. LIght it up, and wait until the bottom ones are starting to turn grey (the top will already be grey, with red fire in between them, but not shooting out). WHen teh bottoms start to turn grey, spread the charcoal out into a circle. This will provide even heat throughout. Put the grill itself on the highest level, so the chicken is farthest from the grill. cook slowly, and ONLY TURN IT OVER ONCE! this will make the middle cook better. If you are going to put sauce on it, put it on the cooked side as soon as you turn it over. Then, (this is the ONLY exception) turn it over, put sauce on the second side, close the lid, and close all vents. Let it sit for about 2 or 3 minutes, and then remove the chicken from the grill.

I made chicken on the grill once - smoked up the whole neighborhood. Must have been five gallons of grease came pouring out of that bird.
